This Easy Shrimp Ceviche is loaded with shrimp that's been marinated in lime juice, sweetened with mango, and spiced with Serrano peppers...the perfect balance of sweet & spicy!

It's a perfect recipe for a hot day when you don't feel like turning on the stove or oven, and it has just a few simple fresh ingredients!
This is one of our good friend Cici's special recipes. We always look forward to Ceviche nights at her house. So we finally started making it at home, and have made it countless times!

Types of Shrimp to Use:
- You can use either cooked shrimp or raw shrimp.
- If using raw shrimp make sure to "cook" the shrimp by letting it marinate longer in the fridge and mixing half way through (about 2 hours) or until the shrimp is pink and opaque.
- We like to buy the baby Wild Caught pre-cooked shrimp from Costco.
How to Make Easy Shrimp Ceviche
- Mix all ingredients in a large bowl.
- Cover and refrigerate. Let it marinate for at least 30 min - 1 hour.
- Enjoy on it's own, or with chips and tostadas!
Doesn't get any easier than that! 🙂
Ways to Serve Shrimp Ceviche
- Serve on tostadas, and top with avocado slices, Creamy Avocado Sauce, or some Red or Green Hot Sauce.
- You can also eat it with a side of chips and some Authentic Guacamole, yum!
- Or simply serve in a bowl with your favorite toppings. 🙂
Storing Shrimp Ceviche:
If you have leftovers, it keeps well in the fridge for 3-4 days, although I doubt it will last that long! We actually think it taste even better the next day.
Make this Easy Shrimp Ceviche on a day you want a fresh, lighter, low-carb meal. Or on a hot day, when you don't feel like turning on the hot stove or oven, and pair it with an ice-cold Skinny Margarita! 🙂

Easy Shrimp Ceviche {with Mango and Cucumbers}
Ingredients
- 2 lbs cooked shrimp (I used mini cooked shrimp. See notes if using raw.)
- 1 mango, peeled & diced
- 1 cucumber, peeled & diced (I used english cucumbers. See notes if using regular.)
- ½ cup red onion, finely diced
- ½ cup fresh cilantro, chopped
- 3 serrano peppers, finely diced (adjust to your preferred spice level)
- 1 cup lime juice (about 5-6 large limes)
Instructions
- Mix all ingredients in a large bowl.
- Cover and refrigerate. Let it marinate for at least 30 min - 1 hour.
- Enjoy on it's own, or with chips and tostadas! 🙂

Notes
- If using raw shrimp make sure to "cook" the shrimp by letting it marinate longer in the fridge, and mixing half way through. It takes about 2 hours, or until the shrimp is pink and opaque.
- If using a regular cucumber, remove the seeds before chopping. Do this by first cutting the cucumber in half lengthwise, and then sliding a spoon down the center to scrape out the middle.
